White Pepper Oil
Part of our Oils range, manufactured and exported by Arizone International LLP.
White Pepper Oil is a fresh, spicy, clean and slightly musty essential oil steam distilled from white peppercorns, the seeds of Piper nigrum with the outer skin removed. It has a softer, cleaner and less woody aroma than black pepper oil, and it is used in food flavours, seasonings, perfumery and speciality products.
Arizone International supplies White Pepper Oil for flavour houses, seasoning manufacturers, food processors and fragrance companies.
How White Pepper Is Made
White and black pepper come from the same plant. Black pepper is made by drying unripe green berries with their skins on. White pepper is made from fully ripe red berries, which are soaked in water for one to two weeks until the outer skin softens and can be rubbed off. The inner seeds are then washed and dried to give smooth, creamy-white peppercorns. This process, called retting, gives white pepper its milder, cleaner, sometimes slightly fermented flavour.
India, especially Kerala and Karnataka, produces white pepper, and Indonesia (the famous Muntok white pepper from Bangka Island), Vietnam, Malaysia (Sarawak) and Brazil are other major producers.
Aroma and Composition
- Limonene and PinenesGiving a fresh, clean top note.
- Beta-CaryophylleneAdding warmth and spice.
- Sabinene and Delta-3-CareneContributing peppery freshness.
Because the outer skin, which holds some of the aroma compounds, is removed, white pepper oil is lighter, cleaner and less woody than black pepper oil. Like black pepper oil, it does not contain piperine and is not hot.
Applications
- Light-coloured sauces, soups and dressings, where black specks are not wanted
- Seasonings, spice blends and snack flavours
- Meat products, sausages and ready meals
- Chinese, Thai and Vietnamese-style flavours
- Perfumery, adding a clean, spicy note to fresh and woody accords
White Pepper Oleoresin
For heat and full flavour, white pepper oleoresin is also available. It is a solvent extract containing both the essential oil and piperine, the compound responsible for pepper's pungency. Please specify whether you need the essential oil or oleoresin.
Safety and Dilution
White Pepper Oil may irritate the skin and should always be diluted before use. Like other terpene-rich oils, it can oxidise over time, so it should be stored in full, tightly closed containers. Use within IFRA standards and food flavour regulations. Keep away from eyes and out of reach of children.
