Pimento Berry Oil, also called Allspice Oil, is a warm, sweet, spicy essential oil steam distilled from the dried, unripe berries of Pimenta dioica. Its aroma combines the notes of clove, cinnamon, nutmeg and pepper, which is why the spice is called "allspice". It is used in food flavours, beverages, perfumery, soaps and traditional products.

Arizone International supplies Pimento Berry Oil for flavour houses, food and beverage manufacturers, perfumers and soap makers.

About Pimento

Pimento is an evergreen tree native to Jamaica, Central America and southern Mexico. Jamaica has long been the most famous source, and Jamaican pimento is considered the finest. The berries are picked green and dried in the sun until they turn reddish-brown and look like large peppercorns. When Christopher Columbus's crew first found them, they thought they were pepper, which is why the spice is called "pimienta" (pepper) in Spanish.

Allspice is a key ingredient in Jamaican jerk seasoning, Caribbean cooking, Middle Eastern dishes and many European pickles, sausages and baked goods. In India, allspice is not widely grown, but it is imported and used in some spice blends, bakery products and processed meat seasonings.

Berry Oil vs Leaf Oil

Pimento berry oil is distilled from the berries and has a rich, complex, sweet-spicy aroma. Pimento leaf oil is distilled from the leaves and is higher in eugenol, with a harsher, more clove-like scent. It is also cheaper. Please specify which one you need.

Aroma and Composition

  • EugenolUsually 65% to 85%, giving the warm, clove-like character.
  • Methyl EugenolPresent in varying amounts, adding sweetness.
  • Beta-CaryophylleneAdding a woody, spicy note.
  • 1,8-Cineole and Other TerpenesContributing freshness.

Applications

  • Meat products, sausages and jerk seasonings
  • Bakery, desserts and confectionery
  • Beverages, liqueurs and colas
  • Pickles, sauces and spice blends
  • Perfumery, especially spicy and oriental accords
  • Soaps and men's grooming products

Safety and Dilution

Pimento Berry Oil is a strong irritant because of its high eugenol content and must always be well diluted before skin contact. Methyl eugenol is restricted in some markets. IFRA limits apply for eugenol and methyl eugenol. The oil may interact with blood-thinning medicines, and it is not recommended during pregnancy or for children. Not for internal use except as a regulated food flavour. Keep out of reach of children.

Quality Parameters

  • Botanical identity (Pimenta dioica berry)
  • Eugenol and methyl eugenol content by gas chromatography
  • Specific gravity, refractive index and optical rotation
  • Aroma and flavour evaluation
  • Screening for leaf oil or synthetic eugenol adulteration

Packaging and Storage

Supplied in aluminium bottles, HDPE containers or drums. Store tightly closed in a cool, dark place.

Tips for Buyers and Formulators

Pimento berry oil gives a complete warm-spice note in jerk seasoning, sausages and bakery, often replacing several separate spice oils. Specify berry oil rather than leaf oil for the richest flavour.
