Hing (Asafoetida) Oil is a powerful, pungent, sulphurous essential oil steam distilled from the oleo-gum-resin of Ferula asafoetida and related Ferula species. Its intense aroma turns into a rich, savoury, onion-garlic flavour when used in tiny amounts in cooking, which makes it a valuable ingredient in food flavours, seasonings and traditional preparations.
Arizone International supplies Hing Oil and asafoetida extracts for flavour houses, seasoning manufacturers, food processors and Ayurvedic product makers.
About Hing
Asafoetida is the dried latex that oozes from the thick roots of Ferula plants when they are cut. These tall, fennel-like perennials grow wild in the dry mountains of Afghanistan, Iran and Central Asia. Although India is the world's largest consumer of hing, almost all raw asafoetida has traditionally been imported, mainly from Afghanistan, Iran and Uzbekistan. In 2020, the CSIR-Institute of Himalayan Bioresource Technology began trial cultivation of Ferula asafoetida in the Lahaul and Spiti valley of Himachal Pradesh, the first effort to grow hing in India.
Hathras in Uttar Pradesh is India's main hing processing centre, where raw resin is blended with gum arabic and flour to make the compounded hing sold in shops.
Aroma and Composition
- Sulphur CompoundsSuch as (R)-2-butyl-1-propenyl disulphide and related disulphides, giving the strong, sulphurous smell.
- MonoterpenesSuch as alpha-pinene and beta-pinene.
- Ferulic Acid Esters and CoumarinsFound in the resin rather than the distilled oil.
Raw asafoetida smells unpleasant to many people, which is why it is sometimes called "devil's dung". When cooked in hot oil or ghee, the aroma mellows into a savoury flavour similar to cooked onions and garlic.
Applications
- Seasonings, spice blends and masalas
- Pickles, papads, namkeen and snacks
- Sauces and savoury flavours, including Worcestershire-type sauces
- Onion and garlic substitute flavours for Jain and certain religious diets
- Digestive churans and Ayurvedic preparations
Traditional Use
In Ayurveda and Indian households, hing is traditionally used to support digestion and relieve gas, often added to lentils and beans. These are traditional uses and not approved health claims.
Safety
Hing Oil is extremely concentrated and should only be used in very small amounts in food flavours. It can irritate skin and mucous membranes. It is not recommended during pregnancy in concentrated form or for infants. Compounded hing may contain wheat flour, which matters for people with gluten intolerance; please ask about gluten-free options. Keep out of reach of children.
Quality Parameters
- Botanical source and origin
- Sulphur compound profile by gas chromatography
- Specific gravity and refractive index
- Aroma and flavour evaluation
- Food-grade compliance and contaminant testing
Packaging and Storage
Supplied in sealed aluminium bottles or HDPE containers to contain the strong odour. Store tightly closed in a cool, dark place, separate from other products.
Tips for Buyers and Formulators
Hing oil is extremely strong, so it is usually diluted in edible oil or dispersed on a carrier before use. A tiny amount in seasoning blends, papad or namkeen gives a savoury, onion-garlic note that is ideal for Jain and satvik foods.
