Garlic Oil is a powerful, pungent essential oil steam distilled from crushed garlic bulbs (Allium sativum). It is one of the strongest flavour oils available, and a very small amount gives the full taste of fresh garlic. It is used mainly in food flavours, seasonings, snacks, sauces, ready meals, animal feed and nutritional supplements.
Arizone International supplies Garlic Oil for food processors, flavour houses, seasoning manufacturers, supplement brands and animal feed companies.
India and Garlic
India is the second-largest producer of garlic in the world, after China. The main garlic-growing states are Madhya Pradesh, Rajasthan, Gujarat and Uttar Pradesh. Mandsaur and Neemuch in Madhya Pradesh are major trading centres. Garlic (lahsun) is a staple in Indian cooking and has been used in Ayurveda for centuries.
How Garlic Oil Is Made
Whole garlic has little smell until it is crushed. When the cloves are crushed, an enzyme called alliinase converts alliin into allicin, which quickly breaks down into a range of sulphur compounds. During steam distillation, these form the characteristic garlic oil. The yield is very low, often around 0.1% to 0.25%, so large quantities of garlic are needed.
Key Compounds
- Diallyl Disulphide (DADS)Usually the main component, giving the typical garlic flavour.
- Diallyl Trisulphide (DATS)Also a major component, with a strong, pungent note.
- Allyl Methyl SulphidesAdding to the aroma.
Note that allicin itself is unstable and is not present in steam-distilled garlic oil.
Applications
- Seasonings, spice blends and snack flavours
- Sauces, soups, pickles and ready meals
- Meat products and marinades
- Garlic oil softgels and nutritional supplements, where permitted
- Animal and poultry feed additives
- Natural pest-repellent products, subject to registration
Diluted Garlic Oil
Because pure garlic oil is extremely strong, it is often supplied diluted in a vegetable oil such as soybean or sunflower oil, for example at 1% or 5%, to make it easier to dose in foods and supplements. Please specify whether you need pure or diluted oil.
Traditional Use and Research
Garlic has been used traditionally in many cultures for heart health and immunity, and it has been studied for effects on cholesterol and blood pressure. These are research topics and not approved claims for garlic oil.
Safety
Pure garlic oil is very strong and can irritate the skin, eyes and mucous membranes. It should always be handled with gloves and good ventilation. Garlic oil may increase the effect of blood-thinning medicines. Supplement use must follow local regulations. Keep out of reach of children.
