Fennel Sweet Oil
Part of our Oils range, manufactured and exported by Arizone International LLP.
Sweet Fennel Oil is a sweet, warm, anise-like essential oil steam distilled from the crushed seeds of Foeniculum vulgare var. dulce. It is used in food and beverage flavours, confectionery, oral care, liqueurs, digestive preparations, soaps and aromatherapy.
Arizone International supplies Sweet Fennel Oil for flavour houses, confectionery and beverage companies, oral-care brands and fragrance manufacturers.
India and Fennel
India is the world's largest producer of fennel seed (saunf). Gujarat, especially the Unjha market in Mehsana district, is the main centre of fennel trade, and Rajasthan is also a major producer. Lucknowi saunf, a fine, green, sweet variety, is especially famous. In India, fennel seeds are chewed after meals as a mouth freshener, often coated with sugar, and are used in cooking and in traditional remedies.
Sweet vs Bitter Fennel
There are two types of fennel oil. Sweet fennel oil (var. dulce) is higher in trans-anethole and sweeter, and it is preferred in flavours and aromatherapy. Bitter fennel oil (var. vulgare) contains more fenchone, giving a bitter, camphoraceous note. Please specify which type you need.
Aroma and Composition
- Trans-AnetholeUsually 60% to 85% in sweet fennel oil, giving the sweet, anise-like flavour.
- FenchoneAdds a slightly bitter, camphoraceous note; higher in bitter fennel.
- Limonene and Alpha-PineneAdd freshness.
- Estragole (Methyl Chavicol)Present in small amounts.
Like anise oil, fennel oil can partly solidify in cold weather because anethole crystallises. Gentle warming restores it.
Applications
- Mouth fresheners, mukhwas and confectionery
- Liqueurs, beverages and anise-type drinks
- Toothpaste and mouthwash
- Bakery, sauces, sausages and spice blends
- Gripe water and digestive preparations, where permitted
- Soaps and aromatherapy blends
Traditional Use
Fennel has been used for digestion in India, the Mediterranean and Europe for thousands of years. The European Medicines Agency recognises fennel fruit preparations as traditional herbal medicines for mild digestive complaints. These are not claims for this specific product.
Safety and Dilution
Sweet Fennel Oil is safe as a flavour in food-grade amounts. The concentrated oil should be diluted for skin use. It is not recommended during pregnancy, breastfeeding, or for young children in aromatherapy, and people with hormone-sensitive conditions should seek advice because anethole has mild oestrogen-like activity. Estragole is restricted in some markets. Use within IFRA and food regulations. Keep out of reach of children.
Quality Parameters
- Botanical type (sweet fennel)
- Trans-anethole, fenchone and estragole content by gas chromatography
- Congealing point, specific gravity and refractive index
- Aroma and flavour evaluation
- Food-grade compliance where required
Packaging and Storage
Supplied in aluminium bottles, HDPE containers or drums. Store in a cool, dark place, but not so cold that it solidifies unless warmed before use.
Tips for Buyers and Formulators
Fennel oil can partly solidify in cold stores, so warm and mix it before use. In mouth fresheners and confectionery, sweet fennel gives a rounder, less sharp flavour than anise, and it pairs well with mint and cardamom.

Compliance
No. They taste similar because both contain anethole, but fennel oil comes from Foeniculum vulgare and anise oil comes from Pimpinella anisum.
Fennel (saunf) is grown mainly in Gujarat and Rajasthan, and the Unjha market in Gujarat is the main fennel trading centre.
Its trans-anethole crystallises in cool weather. Gentle warming melts it back to liquid without affecting quality.
