Cumin Seed Oil is a warm, spicy, earthy and slightly green essential oil steam distilled from the dried seeds of Cuminum cyminum, the familiar jeera of Indian kitchens. It carries the strong, instantly recognisable aroma of roasted cumin and is used in food flavours, seasonings, perfumery, soaps and traditional preparations.
Arizone International supplies Cumin Seed Oil and cumin oleoresin for flavour houses, seasoning and snack manufacturers, food processors, fragrance companies and exporters.
Not the Same as Black Seed (Kalonji) Oil
Cumin seed oil is often confused with "black cumin seed oil". Black cumin seed oil, also called black seed oil or kalonji oil, is a cold-pressed fixed oil from Nigella sativa, a completely different plant. Cumin seed oil, on this page, is a steam-distilled essential oil from Cuminum cyminum. The two differ in aroma, composition, use and safety. If you are looking for kalonji oil, please see our Black Seed Oil page in the carrier oil range.
India and Cumin
India is the world's largest producer, consumer and exporter of cumin seed. Gujarat and Rajasthan together grow almost all of India's cumin, and Unjha in Gujarat's Mehsana district is the country's biggest cumin trading market. The crop is sown in winter and harvested in early spring. Syria, Turkey and Iran are other producers. Cumin is essential in tadka, garam masala, jeera rice and countless spice blends.
Aroma and Composition
- CuminaldehydeUsually the key component, often 20% to 40%, giving the typical warm, spicy cumin aroma.
- Gamma-Terpinene and p-CymeneMajor components adding a fresh, slightly citrusy lift.
- Beta-PineneAdding freshness.
- p-Mentha-1,3-dien-7-al and Related AldehydesContributing to the rich, roasted character.
The oil yield from cumin seed is usually around 2% to 5%. Cumin oleoresin, made by solvent extraction, gives a fuller, more complete flavour for processed foods.
Applications
- Seasonings, curry powders and spice blends
- Snacks, namkeen, chips and instant noodles
- Soups, sauces, gravies and ready meals
- Meat products, sausages and marinades
- Pickles and chutneys
- Perfumery, in tiny amounts for warm, spicy accords
- Soaps and traditional preparations
Traditional Use
In Ayurveda and Indian households, jeera is traditionally used to support digestion, and jeera water is a common home remedy. These are traditional uses, not approved health claims for the essential oil.
Safety and Dilution
Cumin seed oil is safe as a food flavour at normal levels. The concentrated oil is phototoxic, because cuminaldehyde-rich cumin oil has shown phototoxicity, and IFRA sets limits for its use in leave-on skin products. It should always be diluted before skin contact, and skin treated with it should not be exposed to strong sunlight. Not recommended in aromatherapy during pregnancy. Keep out of reach of children.
