Celery Seed Oil is a warm, spicy and distinctly savoury essential oil steam distilled from the seeds of Apium graveolens, the celery plant. It carries the rich, lasting flavour of celery and is used mainly in food flavours, soups, sauces, seasonings and pickles, as well as in perfumery and aromatherapy.
Arizone International supplies Celery Seed Oil for flavour houses, seasoning and food processors, fragrance companies and exporters.
India and Celery Seed
India is one of the world's largest producers and exporters of celery seed. The crop is grown mainly in Punjab, Haryana and Uttar Pradesh, where it is sown in winter and harvested in spring. Indian celery seed is known locally as ajmod or randhuni, although these names are sometimes used for other seeds too. France, China and Egypt are other producers.
The small, brown seeds are crushed and steam distilled. The oil yield is about 2% to 3%. Celery seed oleoresin, made by solvent extraction, is also available and gives a fuller, more complete flavour for processed foods.
Aroma and Composition
- LimoneneUsually the largest component, giving a fresh top note.
- Beta-SelineneAdds a woody, spicy note.
- Phthalides (3-n-Butylphthalide and Sedanenolide)Present in smaller amounts but responsible for the typical, long-lasting celery character.
The phthalides are so powerful that even small amounts make the oil instantly recognisable as celery.
Applications
- Soups, sauces, stocks and bouillon flavours
- Seasonings, spice blends and snack flavours
- Pickles, salad dressings and meat products
- Tomato juice and savoury beverages
- Perfumery, in tiny amounts for green and spicy nuances
- Aromatherapy blends
Research Interest
3-n-Butylphthalide from celery has been studied for its effects on blood pressure and circulation, and celery seed has a history in traditional herbal practice for joint comfort. These are research topics and traditional uses, not approved claims.
Safety and Dilution
Celery is one of the major food allergens listed in EU law, so products containing celery seed oil must be labelled in the EU. People with celery allergy should avoid it. The concentrated oil should be diluted for skin use and is not recommended during pregnancy. Cold-pressed celery products can contain furocoumarins, though steam-distilled oil contains very little. Use within IFRA standards and food flavour regulations. Keep out of reach of children.
Quality Parameters
- Botanical identity (Apium graveolens seed)
- Gas chromatography profile, including limonene and phthalides

Tips for Buyers and Formulators
Celery seed oil is powerful: a few drops can flavour a large batch of soup base or seasoning. Remember to declare celery as an allergen on EU and UK labels, and keep the oil in a cool place to protect its phthalides.
