Zedoary Root, known in India as Kachur or white turmeric, is the dried rhizome of Curcuma zedoaria, a close relative of turmeric and ginger. It has a warm, bitter, camphor-like aroma and is used in Ayurvedic preparations, traditional cosmetics, spice blends and as a raw material for oil and extracts.

Curcuma zedoaria is a perennial herb of the ginger family that grows in north-east India, Kerala and parts of South-East Asia. Its rhizome looks similar to turmeric from outside but has a pale yellow to light brown inside. The rhizomes are washed, sliced and dried.
Zedoary contains essential oil with compounds such as curzerenone, curcumenol and germacrone, along with small amounts of curcuminoids. In Ayurveda, Kachur is used in digestive and respiratory preparations, and in traditional face packs and skin care.
After harvest, the material is dried in the sun or shade, then cleaned to remove stones, dust, stems and other foreign matter, and sorted by size and quality. It can be supplied whole, cut into smaller pieces for tea and extraction, or milled into coarse or fine powder. For food and ready-to-use products, steam sterilisation can be arranged to bring microbial counts within export limits.
