Bamboo Shoot
Part of our Herbs range, manufactured and exported by Arizone International LLP.
Bamboo Shoots are the young, tender shoots of edible bamboo species that push up from the ground during the rainy season. Crunchy, mildly sweet and low in fat, they are an everyday vegetable across East and Southeast Asia and in north-east India, and they are also processed into dried, fermented and powdered ingredients.
Arizone International supplies dried Bamboo Shoots and bamboo shoot powder in bulk for food manufacturers, ready-to-cook brands, nutrition companies, wholesalers and exporters.
A Fast-Growing Food
Bamboo is actually a giant grass, and some species can grow more than half a metre in a single day at the peak of the season. Shoots are harvested when they are still young, before they turn hard and woody. Common edible species in India include Bambusa and Dendrocalamus species. The north-eastern states, especially Manipur, Assam, Nagaland, Mizoram and Arunachal Pradesh, have a rich bamboo shoot food culture.
In Manipur, fermented bamboo shoot is called soibum; in Assam, khorisa; and in Nagaland it is used in many pork and fish dishes. In East Asia, bamboo shoots are a key ingredient in Chinese stir-fries, Japanese takenoko rice and Thai curries.
Why Bamboo Shoots Must Be Processed
Raw bamboo shoots contain a natural compound called taxiphyllin, a cyanogenic glycoside that can release small amounts of cyanide. Traditional practices such as peeling, slicing, soaking, boiling, fermenting and drying remove most of it. That is why bamboo shoots are never eaten raw, and why properly processed dried or fermented shoots are safe food ingredients.

Packaging and Storage
Dried shoots are packed in food-grade poly-lined bags or cartons as required. Store in a cool, dry place and keep sealed, as dried shoots absorb moisture.
Tips for Buyers and Formulators
Dried bamboo shoots must be soaked and boiled before cooking, which also removes natural bitter compounds. For supplements, bamboo shoot powder is often chosen for its fibre and silica content.
For export orders, ask for dried slices with low moisture and no added sulphites, and check whether your market needs a phytosanitary certificate.
