Beetroot is the deep red, sweet taproot of Beta vulgaris. Beyond salads and juices, dehydrated beetroot is a valuable raw material for natural food colour, vegetable powders, soups, snacks and sports nutrition products.

Arizone International supplies dehydrated Beetroot in flakes, cubes, slices and granules, as well as beetroot powder, for food manufacturers, colour companies, supplement brands, wholesalers and exporters.

From Field to Dehydrated Beetroot

Beetroot belongs to the same species as sugar beet and Swiss chard. Wild sea beet grew along Mediterranean coasts, and the ancient Romans mainly ate the leaves. The swollen red root became popular much later. In India, beetroot is grown as a cool-season vegetable in states such as Maharashtra, Karnataka, Uttar Pradesh, Haryana and West Bengal.

For dehydration, fresh roots are washed, peeled, cut into slices, cubes or flakes, and dried at controlled temperatures. Beetroot colour is sensitive to heat, so gentle drying is essential to keep the deep red-purple shade.

What Makes Beetroot Special

  • BetalainsNatural pigments, mainly betanin, which give beetroot its colour. Beetroot red is an approved natural food colour in many countries (E162 in the EU).
  • Dietary NitrateBeetroot is one of the richest vegetable sources of nitrate, the reason it is popular in sports nutrition.
  • Natural Sugars and FibreGiving a mild sweet, earthy taste.
  • Folate and MineralsIncluding potassium, manganese and iron.

Forms We Supply

  • Dehydrated beetroot flakes and slices
  • Dehydrated beetroot cubes and granules
  • Beetroot powder for colour and nutrition
  • Custom cuts on request

Applications

  • Natural red and pink food colour in bakery, dairy, sauces and confectionery
  • Soups, instant meals and seasonings
  • Snacks, chips and granola
  • Beetroot powder for juices, smoothies and sports nutrition
  • Vegetable blends and superfood mixes
  • Natural cosmetics, such as lip tints and face masks

Colour Stability Tips

Betalains are sensitive to heat, light, oxygen and high pH. Beetroot colour works best in products that are not heated for long, have a slightly acidic pH and are packed away from light. For baked goods, we can advise on dosage and alternatives.

Quality Parameters

  • Colour value (betanin content) where specified
  • Moisture content and water activity
  • Cut size and uniformity
  • Nitrate content where specified
  • Microbiology, heavy metals and pesticide residues

Packaging and Storage

Dehydrated beetroot absorbs moisture easily, so it is packed in moisture-proof, food-grade poly-lined cartons or bags. Store in a cool, dry, dark place.

Dehydrated beetroot is also convenient for manufacturers because it removes the need for washing, peeling and cutting fresh roots, reduces storage space and allows year-round supply regardless of the growing season.

Tips for Buyers and Formulators

Dehydrated beetroot flakes and cubes rehydrate well in soups and ready meals, while granules and powder suit snacks and bakery. Keep packs sealed, as dehydrated beetroot absorbs moisture and can lose colour.
