Gurmar Leaves are the dried leaves of Gymnema sylvestre, a climbing plant whose Hindi name means "sugar destroyer". Chewing the leaves briefly blocks the taste of sweetness, and the herb has a long history in Ayurveda for blood sugar wellness.

Gymnema sylvestre is a woody climbing plant that grows in the forests of central and southern India. Its oval leaves are harvested, dried in the shade and sorted. When chewed, compounds in the leaves temporarily stop the tongue from tasting sweet foods.
The leaves contain gymnemic acids, a group of triterpenoid saponins that are used to standardise Gurmar products. The leaves are used as powder, in teas and churnas, and as the raw material for Gymnema extract.
After harvest, the material is dried in the sun or shade, then cleaned to remove stones, dust, stems and other foreign matter, and sorted by size and quality. It can be supplied whole, cut into smaller pieces for tea and extraction, or milled into coarse or fine powder.
