Guar Gum is a natural thickening and stabilising powder made from the seeds of the guar plant, Cyamopsis tetragonoloba. It is one of the most powerful natural thickeners available and is used in ice cream, sauces, bakery, pharmaceuticals, cosmetics, textiles, paper, mining and the oil and gas industry. In food labelling it is known as E412.
Arizone International supplies Guar Gum Powder in food, pharmaceutical and industrial grades, in a range of viscosities and mesh sizes, for manufacturers, wholesalers and exporters.
India Supplies the World
Guar, also known as cluster bean, grows well in hot, dry, sandy areas, and India produces most of the world's guar. Western Rajasthan is the main growing region, with further production in Haryana and Gujarat, and Jodhpur is a major centre for guar processing. The seeds are split to separate the endosperm, known as guar split, which is then hydrated, flaked and ground into fine guar gum powder.
What Guar Gum Is
Guar gum is a galactomannan, a long-chain polysaccharide made of mannose and galactose sugars in a ratio of roughly two to one. It dissolves in cold water and forms a highly viscous solution even at low concentrations. As a thickener, it is often described as several times stronger than corn starch, so very small amounts are needed.
- Cold-Water SolubleHydrates without heating, which saves energy in processing.
- High ViscosityGrades commonly range from around 3,000 to 8,000 cps or more at 1% solution.
- Stabilising ActionPrevents ice crystal growth in frozen desserts and keeps particles suspended.
- Soluble FibrePartially hydrolysed guar gum is used as a gentle soluble fibre supplement.
Applications
- Ice cream, yoghurt, dairy desserts and beverages
- Sauces, dressings, soups and instant foods
- Gluten-free bakery, where it helps bind dough
- Pet food and animal feed
- Tablet binder and bulk-forming agent in pharmaceuticals
- Shampoos, lotions and cosmetics (guar derivatives)
- Textile printing, paper, explosives and mining
- Oilfield drilling and hydraulic fracturing fluids (guar and derivatives)
Quality and Food Safety
Guar gum for food and pharmaceutical use must meet strict purity standards. Importers in the European Union, for example, apply special controls on guar gum from India after a past contamination incident involving pentachlorophenol and dioxins, so exporters provide test reports for these contaminants. Food-grade guar gum should also be tested for microbiology, heavy metals and residual solvents.
Quality Parameters
- Viscosity at specified concentration and time
- Mesh size (for example 100, 200 or 300 mesh)
- Gum content (galactomannan) and protein
- Moisture, ash and acid-insoluble residue
- Microbiology, heavy metals, PCP and dioxins for food grades
Safety Note
Guar gum absorbs a lot of water and swells. Dry guar gum supplements should always be taken with plenty of fluid, and products in large tablet form have been restricted in the past because of the risk of blockage.
