Chicory Root is the dried root of Cichorium intybus, a hardy plant best known as a coffee substitute and as a natural source of inulin fibre. Roasted chicory has been blended with coffee for centuries, and in India it is a common part of South Indian filter coffee.

What Is

Chicory is a perennial plant with bright blue flowers, grown for its thick, white taproot. In India it is cultivated mainly in Gujarat and Uttar Pradesh. After harvest, the roots are washed, sliced into small pieces known as kibbles and dried.

Raw chicory root is rich in inulin, a soluble fibre that can make up a large part of the dry root. When roasted, the inulin partly caramelises, giving the root its dark colour and rich, slightly bitter, coffee-like flavour. Raw root is used for inulin and fibre products, and roasted root for coffee blends.

After harvest, the material is dried in the sun or shade, then cleaned to remove stones, dust, stems and other foreign matter, and sorted by size and quality. It can be supplied whole, cut into smaller pieces for tea and extraction, or milled into coarse or fine powder. For food and ready-to-use products, steam sterilisation can be arranged to bring microbial counts within export limits.

Formulation, dosage, safety assessment, labelling and permitted claims of the finished product must comply with the regulations of the intended market. Chicory inulin can cause gas or bloating when first eaten in larger amounts, and people allergic to ragweed or related plants may react to chicory.

Tips for Buyers and Formulators

Specify the roast level you need for coffee blends, as light and dark roasts give very different colour and flavour.

Roasted chicory absorbs moisture and loses aroma, so pack it in lined bags and keep it sealed.

For coffee blends, chicory is usually added at 10% to 40% of the total weight, depending on the taste and cost the brand wants. We can supply roasted granules sized to match your coffee grind, so the two mix evenly and brew together without separating.
