Arizone International supplies Parsley Seed Oil for flavour houses, food processors, seasoning manufacturers and fragrance companies.
About Parsley
Parsley is a biennial herb of the carrot family, native to the central and eastern Mediterranean. It is one of the most widely used culinary herbs in the world, used fresh in salads, sauces and garnishes such as Middle Eastern tabbouleh and Italian gremolata. Two main types are grown: curly-leaf parsley and flat-leaf (Italian) parsley. Parsley seed oil is produced mainly in France, Hungary, Germany and Egypt.
Seed Oil vs Leaf Oil
Parsley seed oil and parsley leaf (herb) oil are quite different. Seed oil is warmer and spicier, with a woody character from compounds such as apiole and myristicin. Leaf oil has a fresher, greener aroma that is closer to fresh parsley, and it is often preferred for fresh herb flavours. Please specify which one you need.
Aroma and Composition
The composition of parsley seed oil varies depending on the parsley variety and origin. Common components include:
- Apiole (Parsley Apiole)A phenylpropanoid that is a major component in many seed oils.
- MyristicinAlso often present in high amounts, contributing a warm, spicy note.
- Alpha-Pinene and Beta-PineneAdding freshness.
- Elemicin and AllyltetramethoxybenzeneFound in some types.
Applications
- Meat products, sausages and processed meat flavours
- Sauces, soups, dressings and seasonings
- Savoury snack flavours
- Pickles and canned vegetables
- Perfumery, in small amounts, especially in men's fragrances
Important Safety Note
Parsley seed oil can contain high levels of apiole and myristicin, which can be toxic in large doses and can affect the liver and kidneys. Apiole was historically misused in dangerous ways, and concentrated parsley seed oil must never be taken internally except as a food flavour in regulated amounts. It must not be used during pregnancy or breastfeeding, and it is not suitable for aromatherapy or skin care except at very low, diluted levels. Use within IFRA standards and food flavour regulations. Keep out of reach of children.
