Cinnamon in History and in India
Cinnamon is one of the oldest traded spices. It was used in ancient Egypt for embalming and perfume, and it was so valued in ancient Rome that it was worth more than silver. Arab traders kept its origin secret for centuries. True cinnamon grows wild in the Western Ghats of Kerala and in Sri Lanka, and dalchini is an essential part of Indian garam masala, biryani and chai.
Aroma and Key Compounds
- CinnamaldehydeThe compound that gives the classic sweet cinnamon flavour, found mainly in bark and cassia oils.
- EugenolA clove-like compound, found mainly in leaf oil.
- CoumarinFound in higher amounts in cassia than in Ceylon cinnamon.
Applications
- Bakery, confectionery, chewing gum and desserts
- Soft drinks, colas, liqueurs and tea blends
- Toothpaste and mouthwash
- Soaps, candles and home fragrance
- Spicy and oriental perfumes
- Spice blends and seasonings
Research Interest
Cinnamon and its compounds have been studied for antimicrobial activity and, in the case of cinnamon spice, for effects on blood sugar. Results are mixed, and these findings do not support health claims for cinnamon oil.
Safety and Dilution
All cinnamon oils are strong and can irritate or sensitise skin. They must be heavily diluted and are generally not used in leave-on skin care. IFRA limits apply to cinnamaldehyde and eugenol. Cinnamon oil should not be taken internally except as a food flavour in normal amounts. Avoid during pregnancy in concentrated form and keep out of reach of children. Coumarin levels in foods are restricted in some markets.
