Gond Katira Powder is made from gond katira, a natural edible gum that swells into a soft, clear jelly when soaked in water. In India, soaked gond katira is a favourite summer ingredient in sherbets, falooda, rose milk and lassi, valued for its cooling effect. The gum is also used as a thickener and stabiliser in foods, pharmaceuticals and cosmetics.

Arizone International supplies Gond Katira in crystals, flakes and powder for food and beverage makers, sweet shops, Ayurvedic and Unani companies, cosmetic manufacturers, wholesalers and exporters.

What Is Gond Katira?

Gond katira is a plant gum that oozes from the bark of certain trees and shrubs and dries into white to pale yellow crystals or flakes. Traditionally, the name is used for tragacanth gum from Astragalus shrubs of Iran and the Middle East. In India, a similar gum called karaya, from the Sterculia urens tree, is also widely sold as gond katira. Both swell enormously in water. Buyers should specify which gum they require, as properties and regulatory names differ.

Gond Katira vs Gond

Gond katira should not be confused with "gond", the edible acacia gum used in winter laddoos. In traditional Indian practice, acacia gond is considered warming and eaten in winter, while gond katira is considered cooling and taken in summer. They look similar as dry crystals but behave very differently in water: gond katira swells into a jelly, while acacia gum dissolves.

How It Is Used

A small spoonful of gond katira crystals is soaked in water overnight. By morning, it swells many times its size into a soft, translucent jelly. This jelly is added to drinks such as nimbu pani, sherbets, falooda, rose milk and sattu drinks. The powder form hydrates faster and is convenient for manufacturers.
