Dragon Fruit Powder is made from the dried flesh of dragon fruit, also known as pitaya. The red-fleshed variety gives a stunning, natural magenta-pink powder that has become one of the most popular natural colours for smoothie bowls, beverages, desserts and bakery, while white-fleshed dragon fruit gives a milder, paler powder.
Arizone International supplies Dragon Fruit Powder, in red and white varieties, for beverage and food manufacturers, superfood brands, cafés, cosmetic makers, wholesalers and exporters.
About Dragon Fruit
Dragon fruit grows on a climbing cactus of the genus Selenicereus (formerly Hylocereus), native to Central America. Its large, night-blooming white flowers open for just one night. The bright pink, scaly fruit looks like something from a fairy tale, which is where the name comes from. Vietnam is one of the world's biggest producers, followed by other Southeast Asian countries and Latin America. In India, dragon fruit farming has grown rapidly in Gujarat, Maharashtra, Karnataka and Andhra Pradesh, and the Gujarat government has even promoted the name "kamalam" for the fruit.
Types of Dragon Fruit Powder
- Red Dragon Fruit PowderFrom red- or magenta-fleshed fruit, rich in betalain pigments that give a vivid pink colour.
- White Dragon Fruit PowderFrom white-fleshed fruit, with a milder colour and taste.
- Freeze-Dried or Spray-DriedFreeze-dried powder is 100% fruit with the brightest colour; spray-dried powder uses a carrier and dissolves easily.
What Dragon Fruit Contains
- Betalains (betacyanins) in red varieties, the same family of pigments as in beetroot
- Dietary fibre, including fibre from the tiny black seeds
- Natural sugars and a mild, slightly sweet taste
- Vitamin C, magnesium and iron
- Small amounts of healthy fats in the seeds
Applications
- Smoothies, smoothie bowls and juices
- Natural pink colour for yoghurt, ice cream and dairy drinks
- Bakery, frostings, macarons and confectionery
- Lattes, bubble tea and specialty beverages
- Gummies and superfood blends
- Face masks, bath bombs and natural cosmetics
Keeping the Colour Bright
Betalains are sensitive to heat, light and high pH. For the best colour, add dragon fruit powder to products that are not heated for long, keep the pH slightly acidic and use light-protective packaging. In baked goods, the colour may fade or turn brownish, so we can advise on suitable dosages.
Quality Parameters
- Variety (red or white) and drying method
- Colour value and betacyanin content where specified
- Moisture and water activity
- Carrier content for spray-dried grades
- Microbiology, pesticide residues and heavy metals
Packaging and Storage
Dragon Fruit Powder is hygroscopic and should be packed in moisture-proof, light-protective bags and stored in a cool, dry place, sealed after use.
