Coconut Powder usually refers to desiccated coconut: the white flesh of mature coconuts, grated, dried and milled into fine, snow-white particles. It keeps the rich flavour and natural fat of fresh coconut but can be stored for months, making it a key ingredient in bakery, confectionery, Indian sweets and snacks. Defatted coconut flour is also available.

Arizone International supplies Coconut Powder (desiccated coconut) in fine and medium grades, as well as coconut flour, for bakeries, sweet and confectionery makers, food processors, wholesalers and exporters.

How Desiccated Coconut Is Made

Mature coconuts are dehusked and cracked, and the brown skin (testa) is pared off the white kernel. The white meat is washed, grated or shredded, and dried in hot air dryers until the moisture is very low, usually around 3% or less. It is then sieved into grades. The low moisture and high fat content give it a long shelf life when stored properly.

India is among the world's largest coconut producers, with major production in Kerala, Tamil Nadu, Karnataka and Andhra Pradesh. Sri Lanka and the Philippines are well known for desiccated coconut exports.

Grades and Forms

  • Fine Grade Coconut PowderVery small particles for sweets, fillings, bakery and chocolate products.
  • Medium GradeSlightly larger particles for toppings, macaroons and snacks.
  • High-Fat and Low-Fat Desiccated CoconutStandard desiccated coconut is high in fat; partly defatted grades are available.
  • Coconut FlourA defatted, high-fibre flour made after oil extraction, popular in gluten-free and low-carb baking.

Applications

  • Indian sweets such as coconut barfi, laddoo and burfi
  • Bakery: cakes, cookies, macaroons and toppings
  • Chocolate bars, confectionery fillings and snack bars
  • Chutneys, curries and savoury dishes

  • Gluten-free and low-carb baking (coconut flour)

What Coconut Powder Contains

  • Dietary fibre
  • Small amounts of protein and natural sugars
  • Minerals such as manganese and copper

Quality Parameters

  • Fat content and moisture
  • Free fatty acids and peroxide value
  • Colour (bright white is preferred) and particle size
  • Sulphite (if used for whitening) as per destination rules
  • Microbiology, including Salmonella
  • Freedom from brown specks and foreign matter

Packaging and Storage

Coconut Powder is packed in multi-wall paper bags or cartons with food-grade liners, typically 25 kg. Store in a cool, dry place away from strong odours. Because of its high fat content, it can turn rancid if exposed to heat and air for long periods.

Toasted desiccated coconut is also available on request.

Tips for Buyers and Formulators

Coconut powder is high in fat, so keep it cool and sealed to prevent rancidity. Specify the fat content you need.

Tell us whether you need desiccated coconut or fine coconut flour, as they are used very differently in bakery and snacks.
