Banana Powder is made from dried banana fruit and comes in two very different types: green (raw) banana flour, which is starchy, mild and rich in resistant starch, and ripe banana powder, which is naturally sweet and full of banana flavour. Both are versatile ingredients for baby foods, bakery, beverages, smoothies and gluten-free products.
Arizone International supplies both green banana flour and ripe banana powder for food manufacturers, baby-food brands, health-food companies, bakeries, wholesalers and exporters.
India's Banana Heritage
India grows more bananas than any other country, in hundreds of local varieties. In Kerala, the long nendran banana is famous for chips, and nendran banana powder (sometimes called ethakka podi) is a traditional first food for babies: raw bananas are sliced, sun-dried, powdered and cooked into a smooth porridge. This tradition shows how long banana powder has been part of Indian food culture.
Two Types of Banana Powder
- Green Banana FlourMade from unripe bananas that are peeled, sliced and dried at low temperature, then milled. It has a mild, earthy taste and is high in resistant starch, a type of starch that behaves like fibre in the gut. It is popular as a gluten-free and grain-free flour.
- Ripe Banana PowderMade from ripe bananas, usually by spray-drying or drum-drying banana puree, sometimes with a carrier. It is sweet, aromatic and dissolves or disperses well in liquids.
What Banana Powder Contains
- Carbohydrates, as resistant starch (green) or natural sugars (ripe)
- Potassium, magnesium and vitamin B6
- Dietary fibre
- Natural banana aroma compounds (ripe powder)
Applications
- Baby foods, infant cereals and weaning porridges
- Gluten-free bakery, pancakes and pasta (green banana flour)
- Smoothies, milkshakes, protein shakes and drink mixes (ripe powder)
- Ice cream, yoghurt and dessert flavouring
- Energy bars, cereals and snacks
- Resistant starch and gut-health products
- Face packs and natural cosmetics
Choosing the Right Type
If you need a neutral flour for baking or a fibre-rich ingredient, choose green banana flour. If you need banana taste and sweetness, choose ripe banana powder. Heat and cooking reduce the resistant starch in green banana flour, so products focusing on resistant starch should be designed with this in mind.
Quality Parameters
- Banana variety and ripeness stage
- Moisture and water activity
- Colour (browning is controlled during drying)
- Resistant starch or sugar content where specified
- Microbiology, pesticide residues and heavy metals
- Particle size and flowability
Packaging and Storage
Banana Powder is packed in food-grade, moisture-proof bags. Ripe banana powder in particular absorbs moisture and can cake, so it should be kept sealed in a cool, dry place.
Tips for Buyers and Formulators
Green banana powder is rich in resistant starch, while ripe banana powder is sweeter; choose the type that suits your product. Keep it dry.
