Allspice Powder
Part of our Herbs range, manufactured and exported by Arizone International LLP.
Allspice Powder is made from the dried, unripe berries of Pimenta dioica, a tropical evergreen tree. It got its English name because its aroma reminds people of a mix of cinnamon, cloves, nutmeg and black pepper all at once. It is an essential spice in Caribbean, Middle Eastern and European cooking.
Arizone International supplies Allspice Powder and whole allspice berries for spice companies, food manufacturers, seasoning blenders, bakeries, wholesalers and exporters.
The Spice From Jamaica
Allspice is native to the Caribbean and Central America, and Jamaica is so closely linked to it that the spice is also called Jamaica pepper or pimento. When Christopher Columbus's expedition reached the Caribbean, the Spanish mistook the berries for black pepper and called them "pimienta", which is how the name pimento came about. Today, allspice is produced mainly in Jamaica, Mexico, Guatemala and Honduras.
The berries are picked green and unripe, when their aroma is strongest, then sun-dried until they turn reddish-brown and look like large peppercorns. The dried berries are ground into a fine, warm brown powder.
Aroma and Composition
- EugenolThe main aroma compound, also found in cloves, giving the warm, spicy note.
- Methyl Eugenol and Beta-CaryophylleneAdding depth and a peppery touch.
- Volatile OilAllspice berries typically contain a few percent of essential oil.
- Tannins and FlavonoidsPresent in smaller amounts.
Applications
- Jamaican jerk seasoning, marinades and rubs
- Middle Eastern spice blends, including baharat and some shawarma mixes
- Pickling spices, sausages, ketchup and sauces
- Bakery: spice cakes, gingerbread, pies and puddings
- Mulled wine, spiced beverages and liqueurs
- Perfumery and oral-care products (as oil or extract)
Because it combines several flavours in one, allspice is a practical ingredient for manufacturers looking to simplify spice blends.
Allspice vs Mixed Spice
Allspice is a single spice from one plant, not a blend. Mixed spice or pumpkin pie spice, in contrast, are blends of several spices. Buyers sometimes confuse them, so we recommend confirming the product name in specifications.
Quality Parameters
- Volatile oil content and aroma
- Moisture and total ash
- Particle size (mesh)
- Microbiology, with steam sterilisation on request
- Aflatoxins, pesticide residues and heavy metals
- Freedom from foreign matter and adulterants
Packaging and Storage
Ground allspice loses aroma faster than whole berries. We pack the powder in airtight, multi-layer food-grade bags or cartons. Store in a cool, dark, dry place and use within the recommended shelf life.
Allspice leaves and berries are also distilled for pimento oil, which is used in flavours, perfumes and men's grooming products. A small amount of allspice is enough to give a warm, rounded spice note to a product.
Tips for Buyers and Formulators
Allspice powder loses aroma quickly once ground, so buy in quantities you can use within a few months. Ask for steam-sterilised powder for ready-to-eat foods.
