Cardamom Extract is a concentrated flavour and aroma ingredient made from the seeds of green cardamom, Elettaria cardamomum, the "queen of spices". It is supplied as cardamom oleoresin, as a powder extract on a carrier, or as cardamom essential oil, and it is used in food and beverage flavours, confectionery, supplements and fragrances.
Arizone International supplies Cardamom Extract in several forms to flavour houses, food and beverage manufacturers, supplement brands and exporters.
About Green Cardamom
Green cardamom is native to the Western Ghats of South India. Kerala, especially the Idukki district, produces most of India's cardamom, followed by Karnataka and Tamil Nadu. Guatemala is the other major producer. The plant is a tall perennial of the ginger family, and its green pods are picked by hand when nearly ripe and carefully dried to keep their colour. Cardamom is one of the world's most expensive spices by weight, after saffron and vanilla, and it is essential in Indian chai, sweets, biryani and Arabic coffee.
Forms of Cardamom Extract
- Cardamom OleoresinMade by solvent extraction of the seeds. It contains both the essential oil and non-volatile flavour compounds and gives a full, rounded cardamom taste. Used in foods and beverages.
- Cardamom Powder ExtractOleoresin or extract dispersed on a carrier such as maltodextrin or gum arabic, for easy use in dry mixes.
- Cardamom Essential OilSteam distilled from the seeds, with a fresh, sweet, spicy aroma, used in flavours and perfumery.
Key Compounds
- 1,8-CineoleGives a fresh, eucalyptus-like note.
- Alpha-Terpinyl AcetateThe main source of cardamom's sweet, floral, spicy character.
- Linalool and LimoneneAdd freshness.
A good cardamom extract has a high alpha-terpinyl acetate to cineole balance, giving a sweet rather than medicinal flavour.
