Caraway Oil is a warm, spicy and slightly sweet essential oil steam distilled from the crushed seeds of Carum carvi. It has the familiar aroma of rye bread and is used in food flavours, liqueurs, oral care, soaps and perfumery.
Arizone International supplies Caraway Oil for flavour houses, food and beverage companies, oral-care brands and fragrance manufacturers.
About Caraway
Caraway is a biennial plant of the carrot family, native to Europe and western Asia. It has been used as a spice since ancient times, and seeds have been found at prehistoric sites in Europe. The Netherlands, Finland, Germany, Poland and Egypt are major producers, with Finland known for high-quality caraway. Caraway seeds flavour rye bread, sauerkraut, cheeses and many European dishes.
In India, caraway is sometimes confused with cumin (jeera) and black cumin. The Himalayan "shahi jeera" or "kala jeera" (Bunium persicum) is a related but different plant. True caraway (Carum carvi) is also grown in some hilly areas of India.
Aroma and Composition
- D-CarvoneUsually 50% to 65% of the oil, giving the typical caraway flavour. Interestingly, spearmint oil contains the mirror-image form, L-carvone, which smells completely different.
- LimoneneMost of the rest, adding a fresh citrus lift.
- Minor ComponentsSuch as carveol and dihydrocarvone.
Applications
- Bread, bakery, cheese and meat flavours
- Liqueurs such as kümmel and aquavit
- Toothpaste, mouthwash and oral-care flavours
- Digestive preparations and herbal blends, where permitted
- Soaps and men's fragrances
- A natural source of D-carvone
Traditional Use and Research
Caraway has been used in European traditional practice to support digestion and relieve wind, and caraway water was once given to babies. Studies have looked at caraway oil combined with peppermint oil for digestive comfort. These are research findings, not approved health claims for this product.
Safety and Dilution
Caraway oil is safe as a food flavour at normal levels. The concentrated oil should be diluted for skin use, as it may irritate sensitive skin. It is not recommended in aromatherapy during pregnancy without professional advice. Use within IFRA standards and food flavour regulations. Keep out of reach of children.
Blending Tips
Caraway blends well with coriander, cardamom, fennel, orange, lavender, basil and other spice oils.
Quality Parameters
- Botanical identity (Carum carvi)
- Carvone and limonene content by gas chromatography
- Specific gravity, refractive index and optical rotation
- Aroma and flavour evaluation
- Food-grade compliance where required
Packaging and Storage
Supplied in aluminium bottles, HDPE containers or drums. Store tightly closed in a cool, dark place, away from heat and air.
Caraway oil is also sold in rectified grades with a cleaner flavour, and in higher-carvone fractions for oral-care use.
Tips for Buyers and Formulators
For rye bread, sauerkraut and cheese flavours, caraway oil gives consistent strength that whole seed cannot always match. Keep drums tightly closed, as limonene in the oil oxidises with air and can dull the fresh top note.
