Mustard Oil is a golden-yellow oil pressed from the seeds of Brassica juncea and related mustard species. With its sharp, pungent aroma that tingles the nose, it is the everyday cooking oil of Bengal, Bihar, Odisha, Punjab and much of north and east India, and a traditional oil for massage and hair care.
Arizone International supplies Mustard Oil in kachi ghani (cold-pressed) and expeller grades for food processors, cosmetic and massage-oil brands, wholesalers and private label businesses.
Kachi Ghani: The Traditional Way
"Kachi ghani" means cold-pressed. Traditionally, mustard seeds were crushed slowly in a wooden or stone ghani turned by bullocks, which kept the oil cool and preserved its pungency. Modern kachi ghani oil is pressed in low-temperature expellers but follows the same idea. The pungency comes from allyl isothiocyanate, which forms when the crushed seed meets water and enzymes inside the seed. Rajasthan is India's largest producer of rapeseed and mustard, followed by states like Haryana, Madhya Pradesh and Uttar Pradesh.
Composition
- Erucic AcidTraditional Indian mustard oil is naturally high in erucic acid, often around 40%.
- Oleic, Linoleic and Linolenic AcidsMustard oil contains a useful amount of omega-3 alpha-linolenic acid.
- Low Saturated FatGenerally lower than many other cooking oils.
- Allyl IsothiocyanateThe pungent compound, highest in cold-pressed oil.
Traditional Uses in India
Beyond cooking, mustard oil is part of daily care in many Indian homes. Babies are given a warm mustard oil massage, often with a few garlic cloves or ajwain warmed in the oil during winter. It is massaged into the scalp, used on dry and cracked heels, and poured into the diyas lit at festivals. Its warming feel makes it a traditional choice for winter body massage and for joint rubs.
Applications

- Massage oils for adults and babies

Regulations Differ by Market
Because of its high erucic acid content, some countries restrict mustard oil for food use. In the United States, the FDA does not permit expressed mustard oil to be sold as an edible vegetable oil, and it is usually labelled "for external use only". The European Union sets maximum erucic acid levels for oils and foods. In India, FSSAI sets specific standards for mustard oil, including kachi ghani grades. We help clients choose the correct grade and labelling for each destination.
