Matcha Powder is a vivid green, ultra-fine powder made by stone-grinding specially grown green tea leaves. Unlike regular green tea, where the leaves are steeped and removed, matcha is whisked into water and drunk whole, delivering the full leaf with its distinctive rich, grassy, umami flavour. It is used in tea ceremonies, lattes, desserts, bakery and wellness products.
Arizone International supplies Matcha Powder in ceremonial and culinary grades for cafés, beverage and food manufacturers, bakeries, supplement brands, wholesalers and exporters.
How Matcha Is Made
Matcha comes from the tea plant, Camellia sinensis, but it is grown and processed in a special way. For about three to four weeks before harvest, the tea bushes are covered with shade. This slows photosynthesis, deepens the green colour and raises levels of chlorophyll and the amino acid L-theanine, which gives matcha its smooth, savoury taste. The leaves are then steamed, dried, and the stems and veins are removed to produce "tencha". Finally, tencha is slowly ground into a fine powder, traditionally using granite stone mills.
Matcha is closely linked with Japan, where Zen monks popularised powdered tea centuries ago and where it became the heart of the Japanese tea ceremony (chanoyu). Uji near Kyoto and Nishio in Aichi are especially famous matcha regions.
Grades of Matcha
- Ceremonial GradeMade from the youngest, most tender leaves. Bright green, smooth and naturally sweet, for drinking whisked with water.
- Premium or Latte GradeGood colour and flavour, suited to lattes and drinks with milk.
- Culinary GradeStronger and slightly more bitter, ideal for baking, ice cream, smoothies and food manufacturing.
What Matcha Contains
- Catechins, especially EGCG (epigallocatechin gallate)
- L-theanine, associated with calm alertness
- Caffeine, typically more per serving than steeped green tea
- Chlorophyll, which gives the vivid green colour
- Fibre, vitamins and minerals from the whole leaf
Applications
- Traditional whisked matcha and matcha lattes
- Ice cream, desserts, chocolates and confectionery
- Cakes, cookies, breads and pastries
- Smoothies, protein shakes and ready-to-drink beverages
- Energy and focus supplements
- Face masks and natural cosmetics
Caffeine Note
Because the whole leaf is consumed, matcha contains a notable amount of caffeine. Products should state caffeine where required, and people sensitive to caffeine, children and pregnant women should limit intake.
Quality Parameters
- Grade, origin and harvest (first flush is premium)
- Colour (bright green indicates quality), aroma and taste
- Particle fineness
- Moisture, catechin and caffeine content
- Pesticide residues, heavy metals and radioactivity where required
Packaging and Storage
Matcha is very sensitive to light, air and heat, which dull its colour and flavour. It is packed in airtight, light-proof, often nitrogen-flushed packaging, and is best stored refrigerated and used soon after opening.
Tips for Buyers and Formulators
State the caffeine content per serving, and keep matcha cool and sealed.
