Kokum Rind Powder
Part of our Herbs range, manufactured and exported by Arizone International LLP.
Kokum Rind Powder is made from the dried, deep purple rind of kokum fruit, Garcinia indica. It has a pleasant, fruity sourness and a natural purple-red colour, and it is a favourite souring agent in the coastal cuisines of Goa, Konkan and Karnataka, as well as the base of refreshing kokum sherbet and solkadhi.
Arizone International supplies Kokum Rind Powder and dried kokum rind for food and beverage manufacturers, spice companies, ready-to-cook brands, wholesalers and exporters. Standardised kokum extract is also available separately.
The Sour Fruit of the Konkan
Kokum trees grow along the western coast of India, in the Konkan belt of Maharashtra, Goa and coastal Karnataka, and in parts of Kerala. The round fruits ripen in April and May, turning dark purple. Traditionally, the rinds are separated from the seeds, soaked repeatedly in the fruit's own juice with salt, and sun-dried. The dried rind, called amsul or aamsol, is used like tamarind to add sourness to fish curries, dals and vegetables. The seeds are pressed separately for kokum butter.
