Greater Galangal Root is the dried rhizome of Alpinia galanga, a relative of ginger known in India as Kulanjan or Rasna. It has a sharp, peppery, pine-like flavour and is used in Thai and Indonesian cooking, in Ayurvedic preparations and as a raw material for galangal powder and oil.

Alpinia galanga is a tall perennial plant of the ginger family that grows in India, especially in the north-east and Kerala, and across South-East Asia. Its rhizome is thicker and harder than ginger, with a reddish-brown skin and a creamy inner flesh. After harvest, the rhizomes are washed, sliced and dried.
Galangal contains essential oil rich in 1,8-cineole and other aromatic compounds, along with 1'-acetoxychavicol acetate and flavonoids. It is different from lesser galangal (Alpinia officinarum), which is smaller and stronger in flavour.
After harvest, the material is dried in the sun or shade, then cleaned to remove stones, dust, stems and other foreign matter, and sorted by size and quality. It can be supplied whole, cut into smaller pieces for tea and extraction, or milled into coarse or fine powder. For food and ready-to-use products, steam sterilisation can be arranged to bring microbial counts within export limits.
Formulation, dosage, safety assessment, labelling and permitted claims of the finished product must comply with the regulations of the intended market. Galangal is a common culinary spice; in larger medicinal amounts it may cause stomach upset, and pregnant women should use it only in food amounts.
