Garlic Bulb is the whole, fresh or dried bulb of Allium sativum, made up of individual cloves wrapped in a papery skin. Garlic is one of the world's most important culinary ingredients and has a long history in traditional medicine, from Ayurveda to ancient Egypt.

Arizone International supplies Garlic Bulbs and garlic products, including peeled cloves and dehydrated garlic, for food processors, spice companies, supplement manufacturers, wholesalers and exporters.

India's Garlic Belt

India is the world's second largest producer of garlic after China. Madhya Pradesh is the leading garlic state, with the Mandsaur and Neemuch area known for its large garlic markets, followed by Rajasthan, Gujarat, Uttar Pradesh and Maharashtra. Hill garlic from the Kodaikanal region in Tamil Nadu, known as Malai Poondu, has received a Geographical Indication tag for its strong aroma and keeping quality.

Garlic is planted in winter and harvested in spring. After harvest, bulbs are cured in shade for a few weeks so that the outer skins dry and the bulbs can be stored for months.

  • Fresh Garlic BulbsGraded by bulb size, commonly from around 25 mm up to 55 mm and above, in white or purple-skinned types.

What Makes Garlic Pungent

Whole, intact garlic cloves have only a mild smell. When a clove is crushed or cut, an enzyme called alliinase converts a compound called alliin into allicin, which creates garlic's sharp aroma. Allicin then breaks down into other sulphur compounds. This chemistry is behind both garlic's flavour and much of the research interest in its health effects.

Applications

  • Fresh cooking, food service and retail
  • Ginger-garlic paste, pickles, sauces and ready meals
  • Dehydrated garlic for seasonings, snacks and instant foods
  • Garlic supplements, extracts and oils
  • Ayurvedic preparations, where garlic is known as Lasuna
  • Natural pest control and animal feed additives

Quality Parameters

  • Bulb size, clove count and compactness
  • Skin colour and cleanliness
  • Freedom from sprouting, mould and damage
  • Moisture and allicin potential for dehydrated products
  • Pesticide residues, heavy metals and microbiology

Packaging and Storage

Fresh garlic is packed in mesh bags or cartons, typically 5 kg to 25 kg, and shipped in ventilated or reefer containers depending on the destination. Dehydrated garlic is packed in food-grade poly-lined cartons. Fresh garlic keeps best in cool, dry, well-ventilated conditions.

Tips for Buyers and Formulators

Specify bulb size, colour and packing for fresh garlic, as buyers in different countries prefer different grades. For year-round supply, dehydrated garlic flakes, granules and powder are more practical.
