Garlic Powder is made from dehydrated garlic cloves, Allium sativum, milled into a fine, off-white to cream powder. It delivers the savoury, pungent flavour of garlic without peeling and chopping, and is one of the most widely used ingredients in seasonings, spice blends, snacks, sauces and ready meals. It is also used in garlic supplements.
Arizone International supplies Garlic Powder and dehydrated garlic granules and flakes for seasoning companies, snack and food manufacturers, restaurants and food service, supplement makers, wholesalers and exporters.
From Bulb to Powder
India is the world's second largest garlic producer, with major crops in Madhya Pradesh, Rajasthan, Gujarat and Uttar Pradesh. Gujarat, especially the Mahuva area in Bhavnagar district, is known as a major centre for dehydrated onion and garlic processing. To make garlic powder, bulbs are broken into cloves, peeled, sliced and dried at controlled temperatures, then milled and sieved into powder or granules of different sizes.

Flavour and Composition
Dehydrated garlic keeps its flavour thanks to a clever piece of chemistry. Intact garlic contains alliin and an enzyme called alliinase. When dehydrated garlic is rehydrated in food or moistened in the mouth, the enzyme turns alliin into allicin, which gives garlic its sharp aroma. Allicin then breaks down into other sulphur compounds that create garlic's savoury depth. Careful low-temperature drying helps preserve the enzyme and the "allicin potential".

Packaging and Storage
Garlic Powder is packed in food-grade, double-layer poly bags inside cartons, typically 20 kg to 25 kg. It absorbs moisture easily and can form lumps, so it should be stored sealed in a cool, dry place.
Garlic powder blends well with onion powder in most seasonings.
Roasted garlic powder offers a sweeter, milder taste for premium seasonings.
Tips for Buyers and Formulators
Garlic powder is graded by mesh size, colour and pungency. For food use, ask for steam-sterilised powder.
Keep packs sealed to protect the aroma, and tell us the mesh size you need.
