About Shiitake

Shiitake grows naturally on fallen hardwood logs in China, Japan and Korea. The name comes from the Japanese "shii", a type of oak tree it grows on, and "take", meaning mushroom. Cultivation on logs is believed to have started in China about a thousand years ago. Today, shiitake is grown on logs and on sawdust blocks around the world, making it widely available.

Shiitake has a meaty texture and a strong umami taste, thanks to natural glutamates and a compound called lenthionine that gives dried shiitake its distinctive aroma.

Formulation Options

We can fill capsules with whole shiitake fruiting body powder or with hot-water extract standardised to beta-glucans, commonly 20% to 30% or higher. Typical fills are 400 mg to 500 mg per capsule. Vegetarian HPMC capsules are well suited to this plant-based product.

Safety Notes

Shiitake is widely eaten as food and is generally well tolerated. In rare cases, eating raw or undercooked shiitake can cause a skin rash called shiitake dermatitis, which is why supplements use properly processed material. People with autoimmune conditions or on immunosuppressants, and pregnant or breastfeeding women, should seek advice before using concentrated mushroom extracts.
