In plants it usually occurs bound to sugars (for example as rutin or isoquercitrin), while supplement-grade quercetin is the free form, most often supplied as quercetin dihydrate. Commercial material is commonly extracted from the flower buds of Sophora japonica (the Japanese pagoda tree), which are naturally rich in rutin, although other plant sources are also used.
The raw material is a fine yellow powder with a slightly bitter taste. It does not dissolve well in water, which is why some brands choose enhanced forms such as phytosome or other delivery-focused versions, or pair quercetin with ingredients like bromelain or vitamin C in the same capsule.
