Coffee cherries are picked, and the seeds inside, the beans, are cleaned and dried. At this stage they are pale green and smell grassy rather than like coffee. The familiar colour, aroma and flavour only appear with roasting. For green coffee extract, the raw beans are ground and extracted with water or a mild solvent to concentrate the chlorogenic acids.

India grows both Arabica and Robusta coffee, mainly in Karnataka, Kerala and Tamil Nadu. Robusta beans usually contain more chlorogenic acids than Arabica, making them a common raw material for extracts.
