The Chemistry of Garlic
Intact garlic contains a compound called alliin and an enzyme called alliinase, kept in separate parts of the cell. When a clove is crushed or chopped, they mix and form allicin, the compound behind garlic's sharp smell. Allicin is unstable and quickly turns into other sulphur compounds. This is why different garlic products behave so differently.
