Bromelain is found in the fruit and stem of the pineapple (Ananas comosus), but commercial bromelain is mostly extracted from the stem. It is a proteolytic enzyme, which means it helps break proteins down into smaller pieces.
Because bromelain is an enzyme, its strength is measured by activity rather than weight, usually in GDU (gelatin digesting units) per gram or in FIP units. Two products with the same weight can have very different activity, so the activity figure is the key specification.
