What Is "the Mother"?
Apple cider vinegar is made in two stages. First, yeast turns the sugar in crushed apple juice into alcohol, making cider. Then acetic acid bacteria turn that alcohol into acetic acid, which gives vinegar its sour taste. During the second stage, the bacteria form a slimy, web-like film made mostly of cellulose. This is the mother. Most supermarket vinegar is filtered and pasteurised to remove it, while "with the mother" vinegar leaves it in, which is why it looks cloudy.
For capsules, the vinegar is dried onto a food-grade carrier to make a free-flowing powder. The powder is usually specified by its acetic acid content, commonly around 5% to 6%, although other grades are possible.
