About the Acai Berry
Acai (pronounced ah-sah-EE) comes from Euterpe oleracea, a slender palm that grows in the floodplains of the Amazon, mainly in the Brazilian state of Pará. For generations, families along the river have eaten acai as a thick purple pulp with fish or tapioca. It only reached international shelves in the 1990s and 2000s, when acai bowls and smoothies became popular.
The berry is mostly seed. Only a thin layer of pulp and skin surrounds a large stone, and that pulp starts to spoil within a day of picking. This is why acai is almost always frozen as pulp or freeze-dried into powder before it leaves Brazil. Freeze-drying protects the colour and the anthocyanins far better than heat drying.
