How Ginger Extract Is Made
Dried ginger rhizomes are milled and extracted with ethanol or a water-ethanol mixture. The extract is concentrated and dried, often onto a food-grade carrier, to give a free-flowing powder. Drying and heat convert some gingerols into shogaols, so the process affects the final profile.
